COMING HOME MAGAZINE 29 2 Tbsp olive oil 1 yellow onion, diced 1 red bell pepper, chopped 2 medium carrots, chopped 3 cloves garlic, minced 1 jalapeño, finely chopped 2 Tbsp tomato paste 2 Tbsp chili powder 2 tsp cumin 1 tsp paprika ½ tsp oregano salt & pepper (to taste) 28 oz can crushed tomatoes 15 oz can black beans, drained & rinsed 15 oz can kidney beans, drained & rinsed 15 oz can pinto beans, drained & rinsed 2 cups vegetable broth 2 Tbsp olive oil 1 yellow onion, chopped 2 cloves garlic, minced 1 tsp cumin ¼ tsp cayenne pepper 1 tsp oregano ½ tsp paprika 4 cups chicken broth 2 (4 oz) cans diced green chiles 2 (15 oz) cans cannellini beans, rinsed & drained 3 cups cooked chicken, shredded 4 oz cream cheese, softened & cubed 1 Tbsp lime juice salt & pepper (to taste) 1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened. Stir in garlic and spices, and cook for 1 minute. 2. Pour in chicken broth, green chiles, beans, and shredded chicken. Bring to a gentle simmer. 3. Stir in cream cheese, mixing until fully melted. Add lime juice, salt, and pepper, then simmer for 10-15 minutes. 4. Serve warm with your favorite toppings. 1. Heat olive oil in a large pot over medium heat. 2. Adjust seasoning to taste and serve with cornbread. Heat oil in a large pot over medium-high heat. 2. Pat beef dry and brown in batches. Remove from heat and set aside. 3. Lower heat to medium. Add onion and sauté until softened. Stir in garlic, chipotle peppers, and spices, then cook for 1 minute. 4. Add tomato paste, and cook for 1–2 minutes. 5. Return beef to the pot. Add tomatoes and beef broth; stir well. 6. Bring to a simmer, cover, and cook 1½–2 hours, stirring occasionally. 7. Finish with apple cider vinegar and serve with warm flour tortillas. COMING HOME MAGAZINE 29
