1 cup �������������������������������������������������� Jalapeño, chopped
6–7 cloves ����������������������������������������������������������������� Garlic
2 Tbsp ����������������������������������������������������������� Lemon Juice
1 Tbsp ����������������������������������������������������������������������������� Salt
1 Tbsp ������������������������������������������� Ground Black Pepper
2 cups ��������������������������������������� Distilled White Vinegar
2 Tbsp ������������������������������������������������������������������� Olive Oil
1 cup ������������������������������������������� Sweet Onion, chopped
• Core and dice fresh pineapple into 1-inch
cubes�
• Grill pineapple chunks on both sides until
you have nice grill marks and pineapple
becomes slightly soft�
• Roughly chop jalapeño and onion� For extra
heat, leave in the jalepeño seeds�
• Add white vinegar, lemon juice, olive
oil, salt, black pepper, onions, jalapeño,
pineapple and garlic into a blender�
• Blend to desired thickness and serve�
Note: For less heat, substitute tomatillos for
the jalapeños.
