Main Squeeze: Refreshing Summer Citrus Recipes

Please your palate with citrus recipes that burst with flavors of the season.

French 75 

Serves 2 

3 oz. gin 

1½ oz. fresh lemon or grapefruit juice 

1 oz. simple syrup 

4 oz. Champagne or Prosecco 

rosemary sprig (for garnish) 

lemon peel (for garnish) 

1. Combine gin, syrup, and juice in a cocktail shaker filled with ice. 

2. Shake vigorously and strain into a coupe, flute, or martini glass. 

3. Top with 4 oz. of chilled Champagne or Prosecco. 

4. Garnish with a lemon peel and rosemary sprig. 

 

Citrus Salad 

Serves 3-4 

2 avocados, peeled, pitted & cubed 

2 oranges, peeled & cubed 

1 tbsp grated orange zest 

2 tbsp fresh lime juice 

1½ tbsp fresh lemon juice 

1 tbsp grated lime zest 

1 tbsp grated lemon zest 

1 tbsp olive oil 

1 jalapeño, finely sliced 

1 cup spinach, chopped 

½ cup fresh cilantro, chopped 

salt & pepper (to taste) 

1. In a medium bowl, combine all ingredients and toss. 

2. Season to taste with salt and pepper. 

3. Enjoy alone or atop your favorite dish! 

 

Colorful One-Pan Salmon 

Serves 2 

1 large garlic clove, minced 

6 tbsp olive oil 

1 cup green, orange, or yellow peppers, thinly sliced 

½ lb yukon gold potatoes, halved 

2 tsp oregano 

2 tsp paprika 

2 tsp cumin 

2 tsp red pepper flakes 

1 tbsp grated lemon zest 

1 tbsp grated orange zest 

1 tbsp grated lime zest 

½ cup fresh lemon, orange, & lime juice, combined 

2 oranges, sliced into rounds 

2 limes, sliced into rounds 

1 lemon, sliced into rounds 

2 salmon fillets 

salt & pepper (to taste) 

1. Preheat oven to 425 degrees. 

2. Toss potatoes, peppers, and garlic with olive oil on a baking sheet. Season with 1 tsp each of oregano, paprika, cumin, and red pepper flakes. Bake for about 20 minutes, or until tender. 

3. Meanwhile, add the salmon fillets to a bowl and rub with olive oil, citrus zest, salt, and pepper. Season with the remaining spices. 

4. Once the potatoes and peppers are tender, remove the baking sheet from the oven, push the vegetables to the edges of the tray, and place the salmon fillets in the middle. 

5. Pour citrus juice into the tray and arrange the lemon, lime, and orange slices around the salmon. Then, drizzle with olive oil. Return the baking sheet to the oven and roast for 10-20 more minutes, depending on the desired doneness. The salmon should be mostly pale pink and opaque when done. 

6. Divide between plates and enjoy!
