Sausage-Hash Brown Breakfast Casserole

Serves 6-8

Ingredients 

  • 2 lbs hot breakfast sausage 
  • 30 oz bag frozen shredded hash browns  
  • 2 cups cheddar cheese, shredded 
  • 8 eggs 
  • 2 cups milk  
  • 1 tsp salt 
  • ½ tsp pepper 
  • ¼ tsp garlic powder 
  • ¼ tsp onion powder 

Directions  

  1. Preheat oven to 350°F.  

  1. Brown sausage in a large skillet. Drain fat and set aside.  

  1. Add hash browns to skillet and cook until lightly browned. 

  1. Transfer hash browns to a greased 9x13 baking dish. Top with cooked sausage and cheese.  

  1. Whisk eggs, milk, salt, pepper, garlic powder, and onion powder in a bowl and pour over baking dish.   

  1. Bake, uncovered, for 35-40 minutes. 

Texas Breakfast Tacos

Serves 8

Ingredients

  • 2 tsp smoked paprika 
  • 1½ tsp garlic powder 
  • 1½ tsp ground cumin 
  • 1 tsp chipotle chile powder 
  • 4 tsp kosher salt, divided 
  • 2½ lbs beef brisket, fat cap trimmed to ¼-½-inch thickness 
  • 1 large white onion, cut into ½-inch slices   
  • 12 large eggs 
  • ¼ cup whole milk 
  • ¼ tsp black pepper 
  • ¼ cup unsalted butter 
  • 2 cups Colby-Jack cheese, shredded 
  • 16 flour tortillas  
  • 1 cup pico de gallo 

Directions

  1. Stir paprika, garlic powder, cumin, chile powder, and 3 teaspoons of salt in a small bowl. Rub mixture evenly all over the brisket.  

  1. Arrange onion slices in the bottom of a slow cooker. Place brisket, fat cap side up, on top. Cover and cook on low for 8 hours. 

  1. Remove brisket from slow cooker and let stand until cool enough to handle, about 15 minutes. Cut brisket across the grain into about ¼-inch-thick slices. Cover to keep warm. 

  1. Whisk eggs, milk, pepper, and remaining salt in a medium bowl until well blended. Pour mixture into a large non-stick skillet. Add butter pieces and cook over medium-low heat, stirring often, for 5-7 minutes, until egg curds are set but remain tender, 

  1. Assemble the tacos by sprinkling 2 tablespoons of Colby-Jack cheese onto each tortilla and topping each with about ¼ cup of scrambled eggs. Divide brisket evenly among tacos and top with pico de gallo.  

Baked Apple French Toast

Serves 8

Ingredients 

  • 1 loaf French bread, cut into 1½-inch slices  
  • 8 eggs 
  • 3 cups milk 
  • ¾ cup sugar, divided 
  • 1 Tbsp vanilla extract 
  • 5 Granny Smith or Honeycrisp apples, peeled, cored, & cut into rings 
  • 2 tsp cinnamon 
  • 2 Tbsp butter, sliced  
  • maple syrup (for serving) 

Directions

  1. Preheat oven to 375°F.  

  1. Tightly place bread in one layer in a greased 9x13 baking dish and set aside.  

  1. Lightly beat eggs in a large bowl. Whisk in milk, ¼ cup of sugar, and vanilla extract.  

  1. Pour half of the liquid over bread.  

  1. Place apple rings on top of bread to cover. Pour the remaining egg mixture over apples.  

  1. Mix remaining ½ cup of sugar with cinnamon and shake over apples. Dot with butter and bake for 35 minutes.  

  1. Drizzle with maple syrup and enjoy.

Quick & Healthy Egg Muffins

Serves 6

Ingredients

  • 1 cup fresh spinach 
  • 3 cups egg whites 
  • cheese, shredded (to taste) 
  • salsa (to taste)  
  • avocado slices (for topping) 
  • hot sauce (for topping)  

Directions 

  1. Preheat oven to 350°F. 

  1. Line each cup of a greased 6-cup muffin tin with spinach. 

  1. Evenly distribute egg whites over spinach. 

  1. Add cheese and salsa to each cup. 

  1. Bake for 30 minutes.  

  1. Top with avocado slices and hot sauce and serve.  

Avocado Toast

Serves 2

Ingredients

  • ½ Tbsp butter 
  • 2 slices bread  
  • 2 eggs  
  • salt (to taste) 
  • pepper (to taste)  
  • 2 avocados, mashed 
  • 4 slices bacon, cooked & crumbled  
  • 10 oz feta cheese, crumbled  
  • 5-6 cherry tomatoes, quartered  
  • lemon juice (to taste)  

Directions 

  1. Melt butter in a skillet over medium heat. 

  1. Cut a hole in the middle of each bread slice with a cookie cutter. Toast bread in the skillet. 

  1. Crack an egg into the hole of each bread slice. Season with salt and pepper.  

  1. Flip and cook egg to preference. 

  1. Remove from heat. Top with mashed avocado, crumbled bacon, feta cheese, and cherry tomatoes. 

  1. Drizzle with lemon juice and enjoy!
